We have two shipments of oil, fall and spring, and the volume available each year depends on many factors of the growing season.
FALL
“Olio Nuovo” is the freshest pressed oil available only in the fall and just in time for holiday presents. Newly harvested olives are pressed and the oil immediately bottled unfiltered. It is bright green, at its peak in fresh flavor & packed with antioxidants.

SPRING
In spring, after the oil has settled, we get in another shipment. The oil has mellowed a little and the flavor smooths out with the bright green color softening to golden yellow. Perfect for drizzling on spring vegetables and summer tomatoes.

Castiglione Ugolino Inspires
Imagination House
In 2019 Lee Walker published his first book, Imagination House: An Entrepreneurial Life. As author Stephen Harrigan has written, “Lee Walker’s memoir of entrepreneurship is not just a business book…it’s also a kind of handbook about how to live a life that makes room for daring and modesty.”
